Weeknight Dinners: Taco Soup

In cold and dreary weather, I always tend to crave soups and stews, so I recently pulled out my recipe box and rediscovered an old favorite; Taco Soup.  I'm not even sure where this recipe came from, but I'm certain there are a lot of variations of it floating around on Pinterest.

This particular recipe is perfect for a weeknight.  It's quick and easy and will be sure to please even your pickiest eaters.  My whole family likes it which doesn't happen all that often!

RECIPE:

1 pd of ground beef

1 32 oz can beef broth

1 can black beans, rinsed & drained

1 can diced tomatoes

1 pkg of taco seasoning

1 can whole kernel corn with red peppers

PREPARATION:

  1. In a large saucepan, cook beef, drain
  2. Stir in broth, beans, tomatoes, and taco seasoning
  3. Boil over high heat, reduce and simmer 15 minutes
  4. Stir in corn
  5. Serve with tortilla chips

See I told you it was easy!  So easy that it is going to be added to our meal rotation this winter.

It is chunky and rich in flavor.  Just what I like best about a good soup!
