A Beef Burrito Casserole is a simple recipe that is sure to be a family hit!
It’s been a long while since I shared a recipe here on the blog! I recently made a new weeknight dinner that my family enjoyed, so I thought I’d share it with you all. I am always looking for meals that my family will all eat. Please tell me I’m not the only one? It’s almost impossible to please everyone with my cooking. Once in a while I will hit the jackpot on something and when that happens, it’s definitely worth celebrating!
Beef Burrito Casserole
This recipe is a variation of a recipe I found on Pinterest via Pillsbury.
1 lb ground beef
1 Pkg Taco Seasoning
1/2 cup water
1 can (10 oz) red enchilada sauce
1 can (15 oz) pinto beans, drained, rinsed
6 flour tortillas, cut in 1-inch strips
3 tablespoons chopped fresh cilantro
- in 10- inch skillet, cook beef, drain when thoroughly cooked through.
- Add taco seasoning mix, water, enchilada sauce and beans. Cook 3 two 5 minutes, stirring frequently, until sauce thickens. Remove from heat.
- Stir in tortilla strips; top with cheese.
- Put mixture in 9×13 casserole dish, warm at 350 degree oven until cheese is melted. Approximately 10-15 minutes.
- Serve over rice.
