Weeknight Dinners: Sausage and Rice Casserole

Today I am sharing with you one of our family's favorite recipes.  This was a recipe I grew up with and I now make for my own family.  It's a sausage and rice casserole.  I can honestly say this is one that my kids ask me to make over and over.  On a day like today when it is cold outside, this is the perfect comfort food to make.

It's super easy and has a great flavor!  I like it with the hot sausage for extra spice, but the mild sausage also works just fine.  It's your preference.

Recipe:

Ingredients:

1 lb bulk sausage (I use Bob Evans zesty hot)

1/2 onion chopped

1 small celery stalk chopped

5 cups water

1 pkg of Lipton chicken noodle soup secrets (2 packets)

1 cup of uncooked rice (not minute rice)

Steps:

1. Boil 5 cups of water and add both packets of Lipton chicken noodle soup, boil for 7 minutes

2. Saute chopped onion, bulk sausage, and celery until brown, drain

3. Combine both with 1 cup of uncooked rice in a 9×13 casserole dish

4. Bake at 350 degrees for 1 hr

    I actually make something similar to this but with chicken. I may have to switch it out for sausage next time! It sounds tasty!
